  1. Preheat oven to 375°F (190°C). Pat turkey breast dry. Rub skin with olive oil, salt, pepper, sage, thyme, and lemon zest.
  2. Arrange apple slices, onion, and garlic in the bottom of a roasting pan. Place turkey breast on top, skin side up.
  3. Pour apple cider and chicken broth around (not over) the turkey. Roast uncovered for 55-65 minutes, or until internal temperature reaches 160°F. Baste turkey once halfway through.
  4. Transfer turkey to a cutting board. Tent loosely with foil to rest 10 minutes.
  5. Meanwhile, pour pan juices (and all apples/onions) into a small saucepan. Bring to a simmer over medium heat. Whisk in butter. For thicker gravy, stir cornstarch with water, then whisk into pan. Simmer until thickened, 2-3 minutes.
  6. Slice turkey breast. Serve topped with warm cider pan gravy and apple-onion mixture.
