  1. Bring a large pot of salted water to a boil. Cook rigatoni according to package directions until al dente. Reserve 1/2 cup pasta water, drain, and set aside.
  2. Meanwhile, heat a large skillet or grill pan over medium-high. Toss zucchini, red bell pepper, and red onion with 2 tablespoons olive oil, salt, and pepper. Char vegetables in batches, turning occasionally, until edges are blackened and veggies are tender, about 8 minutes. Transfer to a plate.
  3. In the same pan, add sausage and cook, breaking it up with a spoon, until browned and cooked through, about 5-6 minutes. Add garlic and cook 1 minute more.
