Preheat your grill or a grill pan to medium-high. Pat chicken breasts dry and season both sides with salt, pepper, oregano, and 1 tbsp olive oil.
Grill chicken breasts for 6-8 minutes per side, or until nicely charred and cooked through (internal temp 165°F). Transfer to a plate and rest for 5 minutes before slicing.
While chicken grills, toss zucchini and bell pepper with 1 tbsp olive oil, salt, and pepper. Grill vegetables until charred at the edges and just tender, 3-4 minutes per side. Set aside.
In a large mixing bowl, combine cannellini beans, cherry tomatoes, capers, olives, grilled vegetables, 2 tbsp olive oil, balsamic vinegar, and parsley. Toss well and season with additional salt and pepper if needed.
