  1. Heat a large skillet over medium-high heat until very hot, about 2-3 minutes, to mimic 'wok hei' by maximizing flavor through high heat.
  2. Add 1 tbsp olive oil to the hot skillet. Add diced sweet potato and cook, stirring occasionally, until golden and almost tender, 6-8 minutes. Transfer sweet potato to a plate and set aside.
  3. Add remaining 1 tbsp olive oil to the same skillet. Add onion and bell pepper, and cook, stirring frequently, until softened, 3-4 minutes.
  4. Add garlic and cook for 30 seconds until fragrant.
  5. Add ground turkey, breaking it up with a wooden spoon. Season with smoked paprika, thyme, salt, and black pepper. Cook, stirring frequently, until turkey is browned and cooked through, about 5-6 minutes.
  6. Return sweet potatoes to the skillet. Add chopped spinach and toss everything together, cooking until spinach is wilted and everything is heated through, 2-3 minutes.
  7. Taste and adjust seasoning if needed. Serve hot, garnished with extra black pepper if desired.
