Instructions
Preheat your oven to its highest setting (475-500°F) and place a pizza stone or inverted baking sheet inside to heat up.
On a floured surface, stretch or roll the pizza dough into a 12-inch round. Transfer to a parchment sheet or a pizza peel dusted with cornmeal.
Heat 1 tbsp olive oil in a small skillet over medium-low heat. Add the sliced garlic and cook, stirring, until golden and crisp, about 2 minutes. Use a slotted spoon to transfer the garlic chips to a paper towel. Reserve the garlic-infused oil.
In a small bowl, mix ricotta, minced garlic, lemon zest, half of the basil and parsley, salt, and pepper. Set aside.
Brush the shaped dough with the reserved garlic oil. Dollop the herbed ricotta in spoonfuls over the crust, then sprinkle with mozzarella and Parmesan. Scatter red pepper flakes if using.
Slide the pizza onto the hot stone or baking sheet. Bake for 10-12 minutes, until the crust is golden and cheese is bubbling.
Remove from oven. Top with crispy garlic chips and remaining fresh herbs. Drizzle with remaining olive oil.
Slice and serve hot, enjoying the layers of creamy, crisp, and aromatic garlic.
