  1. In a large bowl, whisk together 2 tbsp olive oil, lemon juice, minced garlic, oregano, smoked paprika, cumin, salt, and black pepper.
  2. Add the chicken thighs to the marinade, turning to coat well. Cover and refrigerate for at least 20 minutes (or up to 2 hours for deeper flavor).
  3. Preheat your grill or grill pan to medium-high heat. Oil the grate lightly.
  4. Remove chicken from marinade and grill for 5-6 minutes per side, or until nicely charred and cooked through (internal temp 165°F). Let rest 5 minutes before slicing.
