  1. Preheat oven to 425°F (220°C). Pat chicken thighs dry and place in a bowl. Add lemon zest, half the lemon juice, rosemary, 2 tbsp olive oil, garlic, 1/2 tsp salt, and 1/4 tsp pepper. Toss to coat and marinate 10-15 minutes while prepping other ingredients.
  2. Toss broccolini with remaining 1 tbsp olive oil, 1/2 tsp salt, and 1/4 tsp pepper on a baking sheet. Spread into a single layer.
  3. Arrange marinated chicken thighs skin-side up on the same baking sheet (move broccolini aside to make room). Roast for 22-25 minutes, flipping broccolini once, until chicken is golden and cooked through (165°F internal temp) and broccolini is lightly charred and crisp-tender.
  4. Meanwhile, in a small bowl, mix ricotta with chives, parsley, crushed red pepper (if using), and remaining lemon juice. Taste and season with salt and pepper as desired.
