Preheat oven to 350°F (175°C).
Spread sesame seeds evenly on a baking sheet. Toast in oven for 8-10 minutes, stirring once or twice, until fragrant and just turning golden (do not over-brown).
Cool toasted seeds for a few minutes, then transfer to a food processor or high-powered blender.
Blend for 1-2 minutes until crumbly, then drizzle in 3 tablespoons oil while blending. Scrape down sides as needed.
Continue blending until smooth and pourable, 3-5 minutes total. Add more oil, 1 teaspoon at a time, if needed to reach desired consistency.
Blend in salt, if using. Taste and adjust salt or oil as desired.
Transfer tahini to a jar or airtight container. Store refrigerated for up to 1 month. Stir before using.
