  1. Pat chicken slices dry and toss with 1 tbsp cornstarch and a pinch of salt. Toss tofu cubes with remaining cornstarch. Set aside.
  2. In a small bowl, mix soy sauce, oyster sauce, rice vinegar, and honey. Set sauce aside.
  3. Heat a wok or large nonstick skillet over high heat until just smoking. Add 1 tbsp oil, swirl to coat. Add chicken in a single layer (cook in 2 batches if needed), sear undisturbed 2 minutes, then stir-fry until just cooked through, 3-4 minutes. Remove to plate.
  4. Add remaining oil to wok. Add tofu cubes, cook undisturbed 2 minutes to brown, then stir-fry 2-3 minutes until golden. Remove with chicken.
  5. Reduce heat to medium-high. Add ginger and garlic, stir-fry 30 seconds until fragrant. Add bell pepper and snap peas. Stir-fry 2-3 minutes until crisp-tender.
  6. Return chicken and tofu to wok. Pour in sauce, toss everything together for 1-2 minutes until glossy and heated through. Remove from heat, drizzle with sesame oil, and toss to coat.
