  2. Heat half the olive oil in a large nonstick skillet over medium-high heat. Add chicken and cook 4-5 minutes per side, until golden brown and cooked through. Transfer to a plate, let rest 2 minutes, then slice thinly against the grain.
  3. In the same skillet, add remaining olive oil. Sauté red onion and bell pepper for 2 minutes until softened. Add spinach and cook, stirring, until just wilted, about 1 minute. Season with a pinch of salt and pepper. Divide between two bowls.
  4. Crack eggs into the skillet (no need to clean). Cook sunny-side up or over-easy as desired, 2-3 minutes. (Work in batches if needed.)
  5. Arrange sliced chicken and eggs over spinach mixture in each bowl. Serve with fresh lemon wedges for squeezing over the top.
