Pat shrimp dry with paper towels. Season with 1/4 tsp salt and 1/4 tsp black pepper.
Heat 1 tbsp olive oil in a large skillet or wok over high heat until just smoking. Add shrimp in a single layer and cook for 1-2 minutes per side until pink and just cooked through. Remove shrimp to a bowl.
Add remaining 1 tbsp olive oil to pan. Add red onion and red bell pepper; stir-fry for 2 minutes until slightly softened.
Add zucchini and garlic. Stir-fry for another 2-3 minutes until zucchini is just tender.
Add cherry tomatoes and olives. Toss and cook for 1 minute until tomatoes begin to soften.
Return shrimp and any juices to the pan. Sprinkle with oregano. Toss everything together for 1 minute to combine and heat through.
