Inspired by the playful geometry of a Rubik’s cube, each cube of juicy beef, caramelized sweet potato, and golden zucchini is meticulously arranged for maximum textural and visual satisfaction. Preheat oven to 425°F (220°C). Line a small baking tray with parchment paper.
Toss beef cubes with 1 tsp olive oil, oregano, paprika, salt, and pepper. Set aside.
In separate bowls, toss sweet potato cubes with 1/2 tsp olive oil, salt, and pepper; toss zucchini cubes with remaining 1/2 tsp olive oil, salt, and pepper.
Roast sweet potato cubes on one side of the tray and zucchini cubes on the other for 10 minutes.
Remove tray from oven. Add seasoned beef cubes (space them apart for even browning). Return to oven and roast for 12-14 minutes more, until beef is medium-rare to medium, sweet potatoes are tender, and zucchini is golden.
Arrange roasted beef, sweet potato, and zucchini cubes on a plate in a geometric, Rubik’s cube-inspired grid. Nestle feta cubes among them for color and flavor contrast.
Drizzle with herbed olive oil. Garnish with mint leaves if desired.
