  1. Pat steak slices dry and toss with salt, pepper, and chili powder. Let sit while prepping vegetables.
  2. Heat a large skillet over high until just smoking. Add avocado oil and swirl to coat.
  3. Add steak in a single layer (work in batches if needed). Sear 1-2 minutes per side until browned but still tender. Remove to a plate.
  4. Add bell peppers and onion to the hot pan. Stir-fry, tossing constantly, until slightly charred and just tender, about 3-4 minutes. Stir in garlic and cook 30 seconds until fragrant. Return steak and any juices to the pan. Toss to combine. Remove from heat.
