  1. Combine chicken, 1 tbsp soy sauce, 1 tbsp cornstarch, and 1 tbsp water in a bowl. Mix well to coat and let sit for 10 minutes (velveting step).
  2. In a small bowl, whisk together remaining soy sauce, oyster sauce, honey, rice vinegar, ginger, and garlic. Set aside.
  3. Heat a large wok or skillet over high heat until smoking hot. Add 1 tbsp neutral oil, swirling to coat.
  4. Add half the chicken in a single layer. Stir-fry, tossing constantly, until golden and almost cooked through, 2-3 minutes. Remove to a plate. Repeat with remaining oil and chicken.
  5. Return all chicken to the wok. Add broccoli and 1/2 cup water. Stir-fry, tossing, until broccoli is bright green and just tender, 2-3 minutes.
  6. Pour in the prepared sauce. Stir-fry everything together for 2 minutes, until chicken is cooked through and sauce is glossy and coats ingredients.
  7. Remove from heat. Drizzle with sesame oil, toss to combine. Garnish with green onions and sesame seeds. Serve immediately.
