  2. Add sliced onions and a pinch of salt. Grill, tossing and pressing occasionally, until deeply browned and tender (5-7 minutes). Remove onions and set aside.
  3. Add remaining 1/2 tbsp oil to the pan. Add ground beef, breaking it up with a spatula. Season with salt, pepper, and smoked paprika. Cook, stirring occasionally, until browned and no longer pink (4-6 minutes).
  4. Return grilled onions to pan. Add BBQ sauce and toss everything together for 1 minute to coat and heat through. Remove from heat.
  5. Arrange iceberg lettuce leaves on plates. Spoon hot BBQ beef and onion mixture into the center of each leaf.
  6. Serve immediately as lettuce wraps, letting diners fold and eat by hand. Extra BBQ sauce can be served on the side if desired.
