  1. Pat the chicken pieces dry with paper towels and season generously with salt, pepper, oregano, and smoked paprika.
  2. Heat 1 tbsp olive oil in a large skillet over medium-high. Add chicken in a single layer. Sear until golden on both sides and cooked through, about 5-6 minutes total. Transfer chicken to a plate and tent with foil.
  3. Lower heat to medium. Add remaining olive oil to the skillet. Sauté onion for 2 minutes until softened. Add garlic, stir for 30 seconds until fragrant.
  4. Add zucchini and a pinch of salt. Cook, stirring occasionally, until zucchini is just tender but still bright, about 4-5 minutes.
