  1. In a bowl, combine salmon cubes with 1 tbsp soy sauce, white wine, cornstarch, and 1/4 tsp salt. Toss to coat and set aside for 10 minutes to velvet the fish.
  2. Heat a large wok or heavy skillet over high heat until just smoking. Add 1 tbsp avocado oil and swirl to coat.
  3. Add salmon cubes in a single layer (work in batches if needed). Sear undisturbed for 1 minute, then gently toss for another 1-2 minutes until just cooked through but still moist. Remove salmon to a plate.
  4. Add remaining 1 tbsp oil to the wok. Add red onion, bell pepper, and zucchini. Stir-fry 2-3 minutes, tossing constantly with a forward scooping motion.
  5. Add garlic and optional red pepper flakes. Stir-fry 30 seconds until fragrant.
  6. Add cherry tomatoes, olives, and capers. Stir-fry 1 minute until tomatoes just soften.
  7. Return salmon to the wok. Add remaining 1 tbsp soy sauce, lemon zest, and juice. Gently toss everything together off the heat, just to combine.
  8. Taste and adjust seasoning with extra salt or lemon juice if needed.
  9. Serve stir-fry over warm jasmine rice or quinoa. Sprinkle with fresh parsley just before serving.
