Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Pat the salmon dry and cut into large chunks. Place in a food processor and pulse until finely chopped (or finely mince by hand).
In a large bowl, combine chopped salmon, olive oil, garlic powder, salt, pepper, breadcrumbs, Parmesan, parsley, and egg. Mix until just combined.
Form the mixture into 16 small balls and place them on the prepared baking sheet.
Bake the salmon meatballs for 12-14 minutes, until golden and cooked through.
