  1. Remove the thin membrane from the back of the ribs and cut into individual ribs. Pat dry with paper towels and season all over with kosher salt.
  2. In a bowl, whisk together hoisin sauce, honey, gluten-free soy sauce, rice vinegar, sesame oil, sriracha, garlic, and ginger to create a marinade. Coat ribs thoroughly in the marinade. Cover and marinate in the fridge for at least 2 hours, or overnight for best flavor.
  3. Preheat oven to 300°F (150°C). Line a baking sheet with foil and place a wire rack on top. Arrange ribs on the rack, reserving excess marinade.
  4. Cover ribs with foil and bake for 2 hours until very tender.
  5. Increase oven heat to 425°F (220°C). Brush ribs with reserved marinade and bake uncovered for 10-12 minutes until sticky and caramelized, turning once and basting again halfway through.
  6. While ribs finish, steam broccoli, carrots, and snap peas until just tender, about 5-7 minutes. Season lightly with salt if desired.
  7. Serve ribs hot, garnished with additional sliced scallions or sesame seeds if desired, alongside the steamed vegetables.
