  2. In a large bowl, combine ground turkey, chopped cranberries, diced onion, minced garlic, grated carrot, rolled oats, egg, parsley, Dijon mustard, honey, thyme, salt, and pepper.
  3. Mix gently by hand or with a spoon until just combined. Do not overmix.
  4. Transfer the mixture to the prepared loaf pan and shape it evenly.
  5. In a small bowl, mix olive oil and chicken broth. Brush the top of the loaf with this mixture to keep it moist.
  6. Bake for 30-35 minutes, or until the meatloaf is cooked through and the internal temperature reaches 165°F (74°C).
  7. Let the meatloaf rest for 5-10 minutes before slicing. Garnish with extra parsley if desired.
