Crisp-skinned salmon and charred broccolini create a bold, harmonious base, while an almond gremolata bridges brightness and crunch, echoing the interplay of public spectacle and hidden stories. Each bite is layered, fresh, and designed for sharing (or stolen glances).
Ingredients
Instructions
  1. Preheat grill to medium-high. Brush salmon fillets and broccolini with 1 tbsp olive oil, season with salt, pepper, and rosemary.
  2. Grill salmon skin-side down for 4-5 minutes until skin is crisp. Flip and grill another 2-3 minutes, or until just cooked through. Remove and rest.
  3. At the same time, grill broccolini for 3-5 minutes, turning occasionally, until lightly charred and tender-crisp. Transfer to platter.
  4. While grilling, toast sliced almonds in a dry skillet over medium heat until golden, 2-3 minutes. Set aside.
  5. In a bowl, combine lemon zest, lemon juice, minced garlic, parsley, toasted almonds, remaining olive oil, and red pepper flakes. Stir to make gremolata.
  6. Arrange grilled salmon atop charred broccolini. Spoon gremolata generously over each fillet. Serve with extra lemon wedges.
