This Italian Chicken & White Bean Skillet is inspired by the rustic flavors of Venetian cicchetti—think briny capers, punchy olives, and quality olive oil. Charred broccolini brings a satisfying bitterness and crisp texture, while cannellini beans add creamy richness and boost carbs and protein. The chicken is lemony and juicy, making every bite vibrant and satisfying. The entire dish comes together in one pan, making it both approachable for weeknight cooking and impressive enough for guests. It’s hearty, high in protein, and packed with flavor—a perfect Italian dinner to get excited about!
Ingredients
Instructions
  1. Heat a large skillet or grill pan over medium-high heat. Toss broccolini with 1 tbsp olive oil, half the salt and pepper. Char broccolini in the pan for 4-5 minutes until crisp-tender with blackened spots. Remove and set aside.
  2. Season chicken breasts on both sides with remaining salt, pepper, and half the lemon zest. Add another 1 tbsp olive oil to the pan. Cook chicken for 6-7 minutes per side, until golden brown and cooked through. Transfer to a plate to rest.
  3. Reduce heat to medium. In the same pan, add garlic, red pepper flakes, capers, and olives. Sauté for 1 minute until fragrant. Add cannellini beans and stir to warm through, scraping up browned bits.
  4. Slice chicken and return to pan. Add broccolini, lemon juice, and remaining lemon zest. Toss everything together until well combined and heated through.
  5. Finish with a drizzle of quality olive oil and scatter fresh parsley over the top. Serve hot, ensuring each plate gets plenty of chicken, beans, olives, broccolini, and flavorful juices.
