Roasted chickpeas add a surprising crunch, while fresh basil and lemon keep the mood light and bright. Preheat oven to 400°F (200°C).
Pat chickpeas dry with a paper towel. Toss with smoked paprika, 1 tbsp olive oil, salt, and pepper. Spread on a baking sheet and roast for 20 minutes, shaking halfway, until crisp.
While the chickpeas roast, prepare the vegetables: halve cherry tomatoes, dice cucumber and avocado, thinly slice red onion, and tear basil leaves.
In a large mixing bowl, combine cooled quinoa, tomatoes, cucumber, red onion, basil, and capers.
In a small bowl, whisk together lemon juice, lemon zest, and remaining 1 tbsp olive oil. Taste and adjust seasoning as needed.
Add roasted chickpeas and avocado to the bowl. Pour over dressing and toss gently to combine. Top with extra basil if desired.
Serve immediately in colorful bowls for a playful, summery vibe reminiscent of a stadium crowd.
