  3. Add remaining 1 tbsp olive oil to skillet. Add onion and bell peppers. Sauté for 3-4 minutes until softened. Add minced garlic and cook for 30 seconds until fragrant.
  4. Stir in broccoli and cook for 2 minutes. Return turkey to skillet. Sprinkle with smoked paprika, thyme, salt, and black pepper; toss to combine.
  5. Pour in chicken broth and bring to a simmer. Cover and cook for 4 minutes until broccoli is crisp-tender.
  6. Stir in chopped spinach until wilted. If desired, sprinkle cheese over the top, cover, and let melt for 1 minute off heat.
